Avocado-Pasta-Salad with Buttermilk Dressing

Preparation
- Cook the pasta according to the packet instructions until al dente. Drain and rinse under cold water until cool.
- For the dressing wash the parsley and shake dry. Halve the avocado, remove the stone, scoop out the flesh with a spoon and purée with the other ingredients. Season with salt and pepper.
- Rost the cashews in a pan.
- Halve the avocado, remove the stone, scoop out the flesh with a spoon and dice. Wash the baby leaf and shake dry. Crumble the feta cheese.
- Mix the noodles with dressing, baby leaf and avocado dice. Serve with feta cheese and cashews.
Ingredients [4 servings]
- 12 oz Spirals
- 1 avocado
- 5 oz baby leaf
- 5 oz feta cheese
- 1 oz cashews
For the Dressing
- 1 bunch parsley
- 1 small avocado
- ½ cup buttermilk
- 2 tbsp joghurt
- 1 tbsp lime juice
- 1 tbsp honey
- salt, pepper
