Avocado-Pasta-Salad with Buttermilk Dressing


  1. Cook the pasta according to the packet instructions until al dente. Drain and rinse under cold water until cool.
  2. For the dressing wash the parsley and shake dry. Halve the avocado, remove the stone, scoop out the flesh with a spoon and purée with the other ingredients. Season with salt and pepper.
  3. Rost the cashews in a pan.
  4. Halve the avocado, remove the stone, scoop out the flesh with a spoon and dice. Wash the baby leaf and shake dry. Crumble the feta cheese.
  5. Mix the noodles with dressing, baby leaf and avocado dice. Serve with feta cheese and cashews.

Ingredients [4 servings]

  • 12 oz Spirals
  • 1 avocado
  • 5 oz baby leaf
  • 5 oz feta cheese
  • 1 oz cashews

For the Dressing

  • 1 bunch parsley
  • 1 small avocado
  • ½ cup buttermilk
  • 2 tbsp joghurt
  • 1 tbsp lime juice
  • 1 tbsp honey
  • salt, pepper
